Quick mid week - Chicken & Chorizo skewers.

A short cook and easy to make. These Chicken & Chorizo skewers are ideal for a mid week meal.

☆ Chop some Chorizo sausage into medium slices
☆ Use chicken thigh fillets and chop into decent sized cubes
☆ Thread onto metal skewers ( I added some Haloumi cheese cubes too)
☆ Season the skewers with sea salt, black pepper and dust with smoked paprika. 

Cook over hot coals (slightly indirect to begin with so not to create flames from the fat)
I also threw on some chopped Spanish onion to go with them.

Serve over white rice, with onions and sauce of your choice. (BBQ or Honey glaze works very well).
