With the addition of the Weber, I am starting to try more ambitious cooks.
This one was a bit of experimenting using the cast iron pot I bought a while ago. Also added some charcoal baskets to keep the heat spread across the cooking area and indirect for the meat.
Chopped onion, garlic (one clove) sweetcorn, red pepper, celery, and chorizo.
Then stirred in some tinned tomatoes, Worcester sauce, salt, pepper and paprika into the cast iron and placed over one coal basket.
The pork tenderloin was placed on the edge of the grill away from the coals.
1) Lid on, then leave for 30mins.
2) A quick check on the loin and a brush with home made BBQ sauce.
3) Another 30 mins.
4) Remove the pork, and slice and chop into chunks.
5) Stir the meat into the pot then back with the lid on for another 30mins.
6) Add a few leaves of baby spinach and a bit of salt & pepper.
Smokey, peppery, mediterranean flavours.
