When I started BBQing chicken was always a worrying food.
Nightmares of food poisoning resulting in overdone and often burnt offerings.
I never thought I'd be able to cook chicken wings to any standard. I had only previously tasted them in restaurants or bars.
It is surprisingly easy with the Weber. It's all in the set up.
I watched this video and gave it a go.
Half BBQ and half Hot Wings
For the hot wings, I coated them first in corn flour mixed with pepper and sriracha rub.
The BBQ had a coating of just smokey rub.
The Weber was set up with the charcoal baskets together in the centre of the kettle, the wings placed around the outside.
The wings take about 20 mins for first cook, then add a little extra flavour for the BBQ wings by brushing with sauce. With a turn over, and move around to cook evenly.
After another 10 mins, all the wings removed and the hot wings coated with some sriracha sauce.
The BBQ wings were gone in minutes, the hot wings reserved for those who can stand the heat.
